Try to change the idle seeding time to true and adjust the value. This is one week in minutes.

Well, if you didn't install dropbear after uninstalling openssh, then the only solution is to connect with keyboard/monitor and reinstall it.

Encryption/decryption of data going/coming to/from VPN is CPU intensive.
Monitor the system resources with top or htop.
