Well I would like to thank Joulinar and Friends for helping me out. I pulled the Hat off today to learn I had 3 bent pins and 2 broken pins on the 40 pin connector of the Zero. At that point I just put i down and pulled out my old Model B to run pihole on, I did get DietPi up and running on the Model B no problem. LOL
I will just let the Model B keep going till I can find a newer Pi.

at least one more explanation why the hat was not working. But usually WiFi should be. If you find time, you could continue to play with the Zero W (without hat) to see if you are able to get it running.
