Symfonium is subsonic compatible, like Navidrome is

It makes no difference if you download it directly from github or if you use dietpi-software, it uses the same source.

No, it should work out of the box.
I use substreamer on my android device, which is also compatible to subsonic API.

something seems to be wrong with your DNS settings. At least you are not able to resolve domains anymore.
You are using something like PiHole or AGH?
No, no other apps.
it is not about apt package server, its about DNS resolution. Ensure this is working and try again
