How do you like to use browsers or emails apps without graphical interface?? At least some RDP or VNC solution would be needed.
Anyway, you can install software yourself same way as on every other Debian system.
I don’t know, if you really meant that, however in addition to what @Joulinar already mentioned above, you can use X11 forwarding to run graphics applications remotely - i.e without installing X server inside DietPi host itself.
