Can I set the temperature under DietPi from when the fan should start?
I can’t find a setting for this, or have I overlooked something.
I’m not sure, isn’t there a setting for this in PiOS under raspi-config?

On the RPi4 I solved this with a line in /boot/config.txt.

  dtoverlay=gpio-fan,gpiopin=14,temp=50000

On the RPi5, the fan has a separate connection.

Yes you need to follow official RPI docs. We don’t have an UI option yet
