Good afternoon, I would like to configure dietpi with a double network card to be able to use one interface as wan and another as lan for applications like pi-hole, but when I enter the dietpi configuration I only find the option to manage a single interface, is there any Any idea how to do it?
You would need to configure it directly in your /etc/network/interfaces (or create a drop-in config at /etc/network/interfaces.d). At the moment DietPi does only supports to config the default interfaces with the dietpi tools.

Yes a drop in configuration would be needed to add the 2nd adapter
