I was a bit too fast yesterday, when I installed HomeAssistant. It took very very long. Now I have seen, that it takes a lot of work to administrate this stuff. Can I assume, that an uninstall give me my „old“ system back.?

It will remove HA app but will leave dependencies in place like Python pip, because we don’t know if it is used by other apps you are running. You can check uninstall menu to check what is installed.
Better option would be doing backups before playing with software apps
