Change boot/dietpi.txt on proxmox?

I’ve been using DietPi on some Pi3B+ for a while fine. I’ve found it really helpful to store boot/dietpi.txt files elsewhere for when I need to reinstall things.

I’ve now got a couple of mini pcs running Proxmox in a cluster, and I’d like to use the same approach of backing up the boot/dietpi.txt files so I can recreate VMs easily. However, I’m not sure how to go about modifying the boot/dietpi.txt file between the initial install and the first boot. With a Pi one can mount the sdcard after its been written to, but with with proxmox should I be mounting the virtual drive on a different vm to modify the boot/dietpi.txt file? Is there another approach I’m not considering?

In fact, VM images behave differently from RPi or other SBCs. The only options here are either to modify the image before writing it or to mount the virtual disk elsewhere afterward.
