Question about dietpi-backup restore

First off thanks to the community for all the great work on the 7.5 release. I wanted to ask if I have a good backup from a updated 7.5 buster 32-bit system and I then wipe and install a clean 64-bit dietpi bullseye install will the 32-bit backup restore properly?

Nope this is not gonna work. The backup contains your entire 32bit Buster system. Restoring it on 64bit Bullseye, will downgrade you to the original status. Furthermore, switching architecture will most probably leave your system unbootable.

Basically you could upgrade your existing system to avoid starting from scratch. Usually there no real benefit of 64bit compare to 32bit.
