can someone explain why after 2 days 99% virtual memory in use
only run plex server and motioneye

Hi,

many thanks for your message. Basically I would say, because virt Mem is used by your system :)

Looking to your picture will show that virt Mem is around 50MB. While phys Mem is still more than 1,5GB free.

yes nothing to worry about. You could use thinks like free -m or htop on command line to check memory usage

Which file can be modified to increase that?

Is this the ZRAM addon that was implemented recently?

ZRam is not yet implemented in production. Will be released with next DietPi version, probably. That's why assume it's SWAP in this case.
