Looks like RAMdisk isn't saving back to disk.Here's the results I get from updating...
After running the update (dietpi-update), please try the following commands and paste results:

service dietpi-service stop
systemctl status dietpi-service -l
cat /boot/dietpi/.version
service dietpi-service start
dietpi-services start
cat /DietPi/dietpi/.version
systemctl status dietpi-service -l
