hmm there could be some issues with your SD card. At least that would explain the issues you had during the update to extract the data and on your kernel panic.

honestly I never used OpenSSH as SSH server. So I can't tell. But I guess the one used for initramfs is not the same as for the regular SSH session. Something you would need to try.

The backup you have done, was this on Buster or on a different version? You know use Buster or Bullseye? There are a couple of post at the baikal GitHub about how to restore. At least you would need to decide which one to keep as both files contains the same parameters, just with different values.

basically you have a similar configuration in 2 different files. I would recommend to place all your stuf into a single file to avoid duplicate and conflicting entries.

Probably best to use /etc/nginx/sites-enabled/default and to adjust to your needs

You are missing directory /run/dietpi/. Usually it should be created during boot process as it is used by a couple of scripts. can you check related service
