I am curious if there is any documentation/help/man pages available in the OS? even just a list of all the dietpi-xyz commands would be really helpful.

I have spent a good deal of time on that website. Are you telling me that this does exist and the answer is in there but you want me to hunt for it? Or that it does not exist but the web docs are available?

There are no man pages on CLI if you look for this. DietPi script are explained on the online docs https://dietpi.com/docs/dietpi_tools/
