Getting MotionEye working properly at resolutions above 1280x720

System info:
DietPi v9.6.1
RPi 2 Model B with Camera v 2.1
RPi 3 Model B with unbranded OV5647
motionEye Version 0.43.1b2
Motion Version 4.6.0

When I try to set either camera above 1280x720, both auto-exposure and manual controls stop working.
I’ve been trying to find a solution, most I’ve found discuss using libcamera, and using a script for MotionEye to start it.This GitHub comment seems to be the most authoritative on the subject but the instructions there don’t work.

There is a lot of ‘noise’ on this subject with various threads with a wide range of dates.
What is the current best way to get things running with current software?
