I have two Pi 0s running as mosquitto brokers. Yesterday I upgraded both, they went from 6.34.2 to 7.0.2. On both of them the mosquitto.conf file was lost during the upgrade. After upgrading mosquitto started and ran but would only accept local connections. Had to redo the conf file on both.

Mosquitto is updated from it’s own apt repository. https://repo.mosquitto.org/debian/pool/main/m/mosquitto/
Probably there was a new version released by mosquitto and your installation got updated in front of DietPi script update. As far as I can see version 2.0.9 has been released in 11th of March. Maybe something for mosquitto to look into.
